Andy's Smashed Avo
PREP TIME 5 minutes
COOK TIME 10 minutes
SERVES 2
INGREDIENTS
2 avocados, deseeded and diced
Juice of 1 lime
1 cm knob of ginger, grated
½ tsp sesame oil
½ tsp fish sauce
1 bunch coriander, chopped
Pinch of Tasman sea salt
½ tsp pepper
2 slices of sourdough
1 tbsp walnuts
To serve;
1 tsp sesame seeds
1 long Thai chilli, sliced
METHOD
Step 1
Place avocado in a large mixing bowl, add lime juice, grated ginger, sesame seed oil, fish sauce and coriander. Season with salt and pepper. Mash until well combined.
Step 2
Toast the sliced sourdough and walnuts on a griddle pan. Mix walnuts through avocado mix.
To serve, spread smashed avocado over the sourdough and garnish with sesame seeds and fresh chilli.
