Asian Chilli Chicken

SERVES 4
INGREDIENTS
2 tbsp Pukara olive oil
3 garlic cloves, thinly sliced
4 cm knob of ginger
Small handful of cherry tomatoes
3 chillies, sliced
6 spring onions, chopped (plus extra to serve)
800g chicken thighs, roughly chopped
Pinch of Tasman Sea salt
2 tbsp demerara sugar
Juice of 1 lemon
⅓ cup ketchup manis
METHOD
Step 1
In a pan over medium heat add olive oil, garlic, ginger, tomatoes, chilli, spring onion and stir. Sauté for 10 minutes, stirring occasionally.
Step 2
Turn the heat to high and add in the chicken and salt, sauté for a few minutes. Once chicken starts to caramelise, stir and add sugar, lemon juice and ketchup manis. Stir and simmer until chicken is fully cooked.
Step 3
Remove from the heat and add fresh spring onion.
