Chilli Jam
PREP TIME 5-10 minutes
COOK TIME 20 minutes
INGREDIENTS
1 white onion, thinly sliced
5 chilli, sliced
1 shallot, finely diced
2cm knob ginger, thinly sliced
⅔ cup sugar
¼ cup mirin
2 tbsp fish sauce
2 tbsp peanut oil
2 tsp sesame oil
METHOD
Step 1
Heat oil in a pan over low to medium heat. Add onion and cook until soft, approximately 3-5 minutes.
Step 2
Add chilli, shallots and ginger to the pan, continue to cook for a further 5 minutes. Once soft, add sugar, mirin, fish sauce, peanut oil and sesame oil, simmer for approximately 20 to 30 minutes.
