Goats Cheese, Watermelon and Balsamic Salad

INGREDIENTS
¼ cup Robur Farm goats cheese
½ cup watermelon, chopped
½ cup strawberries, chopped
1 tbsp Pukara white balsamic vinegar
1 tbsp Pukara olive oil
Pinch of Tasman sea salt
4 mint leaves
8 rocket leaves
METHOD
Step 1
Place strawberries, watermelon, white balsamic, olive oil and salt in a bowl, toss to combine.
To serve, place mint leaves and rocket on top of the salad. Finish with a few dollops of goats cheese.
