Prawn Cocktail

INGREDIENTS

1 celery stick, finely diced
½ cucumber (seeds removed), finely diced
¼ cup kewpie mayonnaise
¼ cup Meander valley crème fraiche
Pinch of Tasman sea salt
1 tsp Shima wasabi powder
200g cooked prawns (tails removed), cut in half
4-8 cos lettuce leaves, to serve

METHOD

Step 1
Combine celery, cucumber, kewpie, crème fraiche, salt and wasabi powder in a bowl. Mix through prawns and chives.

Serve in a cup of lettuce.
