Tomato and Bocconcini Salad

INGREDIENTS
1 garlic clove
½ cup cherry tomatoes, halved
3 tbsp lemon vinaigrette (refer to recipe on website)
1 purple shallot, sliced
1 tsp capers
Bocconcini
To serve;
2 slices sourdough, toasted
Fresh basil
Edible flowers (optional)
METHOD
Step 1
Rub a garlic clove onto the top of each slice of sourdough, cut sourdough into bite size croutons.
Step 2
Add cherry tomatoes, lemon vinaigrette, shallot, capers, bocconcini and a crack of pepper to a bowl, toss to combine.
To serve, place ½ of the croutons onto a plate and top with tomato salad. Place remaining croutons on top and garnish with fresh basil leaves and edible flowers.
