Smashed Avocado with 62 Degrees Egg

INGREDIENTS
2 avocados
½ packet Old El Paso guacamole spice mix
2 tomatoes, roughly chopped
1 slice sourdough, charred
1 egg
METHOD
Step 1
Preheat water to 62ºC. Place whole egg into pot of water for approx 45 minutes.
Step 2
Place avocados and guacamole spice mix into a bowl and mash together until broken down.
Step 3
Spread avocado on top of sourdough before serving with egg, tomato and a pinch of salt and pepper on top.
