Chicken Wings
PREP TIME 15 minutes
COOK TIME 1 hour
SERVES 4
INGREDIENTS
800g chicken wings
1 pinch Tasman sea salt
2 tsp baking powder
½ tsp chilli flakes
1 tbsp szechuan peppers
½ tsp cumin
3 cloves garlic, diced
½ ginger, diced
1 tbsp sesame oil
3 tsp soy sauce
3 tbsp shaoxing rice wine
3 tbsp water
3 tbsp brown sugar
METHOD
Step 1
Preheat oven to 220ºC. Place chicken wings in a bowl with salt and baking powder and stir together well before placing onto an oven tray.
Step 2
Place tray in oven for approx 30 minutes before turning over and cooking for a further 15-30 minutes.
Step 3
Place chilli flakes, szechuan peppers and cumin into a pan and lightly toast for a few minutes before placing into a spice grinder and blitzing together.
Step 4
Once blitzed together, add spices to pot with garlic, ginger, sesame oil, soy sauce, shaoxing rice wine, water and brown sugar and heat up and reduce until at a thick and sticky consistency.
Step 5
Once chicken is cooked, place into pot and coat with mixture before serving up.
